Electron Beam Processing Can Reduce Poultry Pathogens, Study Shows Turkey Meat Quality Remains Well Preserved

A study on electron beam treatment of poultry meat products shows that electron beam irradiation has the potential to reduce the risk of foodborne pathogens in poultry while preserving meat quality as much as possible. The paper, titled "Effects of Electron Beam (eBeam) Treatment on the Texture and Sensory Attributes of Chicken and Turkey Meat Batters," was published in the journal Poultry Science.

Electron beam is a non-thermal processing technology that uses high-energy electrons to cause irreversible damage to pathogen DNA or RNA, making it difficult for bacteria to replicate. Like X-rays and gamma rays, electron beam has been approved by the U.S. Food and Drug Administration for "cold pasteurization" that does not rely on heating.

The research team used the electron beam irradiation equipment at the National Center for Electron Beam Research at Texas A&M University to process chicken and turkey meat batters. The researchers noted that ground poultry was selected as the study subject because such products are closely associated with the risk of foodborne pathogens such as Salmonella and Campylobacter, and are also a significant cause of related product recalls.

The study focused not only on evaluating electron beam's ability to control pathogens, but also on whether irradiation treatment affects meat quality. The researchers pointed out that electron beam does not cook the meat the way heating does, but the treatment process may trigger oxidation reactions, and since poultry meat contains higher levels of unsaturated fats, it is more susceptible to oxidation, which can lead to off-flavors, odor changes, or color changes.

The results showed that turkey meat batter packaged under modified atmosphere packaging performed well after electron beam treatment. The researchers stated that under this packaging condition, electron beam was able to inactivate pathogens while maintaining meat quality. In contrast, off-flavor issues were observed in chicken samples.

The paper's authors also mentioned that previous studies have shown that irradiating 1-pound commercial packages of ground poultry meat inoculated with Salmonella and Campylobacter using 3 kiloGray electron beam reduced bacterial counts by 99.99%. The study concludes that electron beam treatment offers a promising intervention for enhancing the microbiological safety of poultry products, but dose control and meat quality impacts remain key factors to manage in practical applications.
